INGREDIENTS
100g jumbo oats
100g wholemeal spelt flour
100g sultanas (or raisins)
100g sugar
100g ground flaxseeds
125g ground almonds
75g sesame seeds
50g quinoa flakes
15Tbs soya milk
3Tbs oil
2tsp cinnamon
(My preference is to use all organic ingredients. Most of these are.)

Please add more sugar if you like sweeter cookies than myself.
You can play around with ingredients when you are familiar with the process. For instance, try different spices as well as, or instead of, the cinnamon (i like a lot!)...ginger is nice, but i aint got none!
4 or 5 mashed bananas is often the base for my usual recipe...but i ate 'em after yoga practice these last two mornins!!! ... and that is the reason for the oil quantity...i prefer low fat as a standard in my diet.

When mixture has a malleable consistency, use a fork to smooth into/onto an oiled or non-stick baking tray.
Score the mixture into the size of cookie that you prefer...
...then bake on a low shelf for about 45 minutes at about Gas Mark 4.
